雪耳又名银耳与白木耳. 原来是野生于石上的胶质菌,雪耳有活血清热与润肺滋阴及强心补脑功能。银耳用硫磺熏过以后,颜色变的雪白而得的名。购买银耳时选微黄的比较好,为自然色,没被硫磺熏过。
银耳味甘、淡、性平、无毒,既有补脾开胃的功效,又有益气清肠、滋阴润肺的作用。银耳富有天然植物性胶质,外加其具有滋阴的作用,是可以长期服用的良好润肤食品。
1、先把银耳放入凉水中浸泡1到1.5小时
2、个别银耳泡发后会变很多,故请根据食量泡发。
可用来煲糖水,鸡汤
雪耳香梨糖水
材料:雪梨1个、银耳10克、川贝3克。
雪梨洗净,切开去芯,再切小片;雪耳浸泡、去杂质;一起与川贝放进 沙锅内,加入冰糖10克、清水600毫升(约2碗半量), 文火熬至200毫升(约1小碗)。亦可加入冰糖10克、冷开水200毫升放至炖盅内,隔水炖两个小时便可。
